In a small bowl, combine Honey (1 tsp), Neutral Oil (1 Tbsp), Soy Sauce (1 Tbsp), and Lemon Juice (1/2).

Poke holes in both sides of the Flank Steak (1 lb) with a fork. Brush with marinade. Cover and marinate the steak for 30 minutes. Don’t discard the marinade.

Pat the steak dry. Heat a cast-iron skillet over medium-high heat with Neutral Oil (1 Tbsp) and sear steak for 3-4 minutes a side, or until 130 degrees F (55 degrees C) in the middle for medium-rare.

Transfer steak to a tray and cover with foil. Let it rest for 5-10 minutes.

To the same pan over medium-high heat, add Butter (2 Tbsp). Once hot, add Button Mushrooms (2 1/4 cups). Cook until mushrooms are softened and begin to brown, 2-3 minutes, then season with Freshly Ground Black Pepper (as needed).

Turn the heat to medium and add the All-Purpose Flour (2 tsp), stir until it coats the mushrooms.

Add the remaining marinade, Beef Broth (1/2 cup), Balsamic Vinegar (2 tsp), Lemon Juice (1/2), and Garlic (1 clove), and cook for 2-3 more minutes, until thickened.

Cut steak against the grain, then pour the sauce over the top, optionally garnish with Fresh Thyme (4 sprigs), and serve.
