Cooking Instructions

In a large pot, heat Olive Oil (2 Tbsp) over medium-high heat and add in the Chicken (1 lb). Brown and add Cajun Seasoning (2 tsp). Cook through and stir occasionally until spices become fragrant; about 2 minutes.

Add the Green Bell Peppers (2) and Yellow Onion (1) and cook until they become translucent and soft; about 3-4 minutes.

Stir in the Garlic (2 cloves) and cook for 1 minute to get the raw taste of it out.

Once cooked out, toss in Penne Pasta (12 oz), Chicken Broth (4 cups), and Diced Tomatoes (1 can). Let it come to a boil and stir occasionally until pasta is Al dente and the sauce is thickened and reduced by half, about 15 minutes.

Remove from the heat and add the Cream Cheese (3/4 cup). Make sure the heat is off when adding the cream cheese or it will split. The sauce may look runny, but it will thicken once cooled.

Season with Salt (1 tsp).
