In a spice grinder, pulse the Dried Grasshopper (1/2 cup) until they become a coarse dust. Mix the chapulines with the Kosher Salt (1 Tbsp), and stir to combine.

Prepare the glass: Rub a wedge of Lemon (1) around the rim of the margarita glass and dip the rim into the cricket salt to coat completely.

Make the cocktail: Fill a cocktail shake with Ice (to taste) and add the White Mezcal (2 fl oz), Lemon Juice (0.5 fl oz), Pineapple Juice (0.5 fl oz), and Agave Syrup (0.5 fl oz). Shake vigorously for 10 seconds and strain into the prepared glass.
