Preheat an oven to 400℉ (200℃).

Cook the yams: Poke Yams (4) all over with a fork and place on an aluminum lined baking sheet. Lightly coat with Olive Oil (as needed) all over and season with Kosher Salt (to taste).

Roast the yams until they are fork tender, about 40 minutes. Let cool slightly and peel the skin.

In a small saucepan over medium heat, add the Honey (4 Tbsp), Crushed Red Pepper Flakes (1 tsp), Hot Sauce (1 tsp), and Vanilla Bean Pod (1).

Bring the mixture to a boil then reduce to a simmer and whisk in the Evaporated Milk (1/2 cup), Unsalted Butter (2 Tbsp), Ground Cinnamon (1 tsp), and Ground Nutmeg (1/2 tsp). Continue cooking until the butter is melted and the mixture is silky. Season with salt and remove from the heat.

Place the peeled yams in a large mixing bowl and add the honey mixture. Using a whisk, combine the filling until smooth.

Make sugar coating: In a small bowl, mix together Granulated Sugar (4 Tbsp) and Cayenne Pepper (1 tsp) until well combined.

Place yam mix into a 9-inch (22-cm) and use a spoon or offset spatula to smooth out the top. Sprinkle the spiced sugar evenly across the top and use a brulee torch to caramelize the sugar.
