Make the donut dough: Place the Apple Cider (2/3 cup) in a small saucepan over medium high heat and bring to a boil. Continue boiling until the cider reduces by half. Remove from the heat and let cool completely.

In a medium mixing bowl, whisk together the All-Purpose Flour (2 cups), Baking Powder (2 tsp), Kosher Salt (1 tsp), Ground Cinnamon (1 tsp), and Ground Nutmeg (as needed).

In a large mixing bowl combine the Farmhouse Eggs® Large Brown Eggs (sponsored) (4) yolks and Brown Sugar (1/2 cup) and whisk the mixture turns a pale golden yellow and ribbons form when you pick up the whisk.

Continue whisking and slowly drizzle in the butter until combined.

Add the Unsalted Butter (8 tsp), Buttermilk (4 Tbsp), Vanilla Extract (1 tsp), and ⅓ cup apple cider concentrate. Whisk until smooth, then add the dry ingredients to the wet ingredients.

Whisk until the mixture forms a thick cake batter. Cover the bowl with plastic and refrigerate for 1 hour.

Make the sugar topping: In a small mixing bowl, whisk together the Granulated Sugar (3/4 cup) and the Ground Cinnamon (1 Tbsp) until evenly combined. Set aside in the bowl.

Fry the donuts: Place a heavy bottom pot fitted with a fry thermometer over medium heat until it reaches 350℉. Place a wire rack over a sheet tray next to the Neutral Oil (4 cups).

Generously flour a clean work surface and place the chilled dough on top. Liberally flour the top of the dough and gently roll to about ½ inch thick. Use a 3-inch ring mold to create 6 discs of dough. Use a 1-inch cutter to remove the center of each disc. Reserved the donut holes if desired. If you don’t have a ring mold, you can use the rim of a drinking glass and a shot glass to cut the dough discs.

Gently place the dough discs into the oil, working in batches to not overcrowd the pot, and fry until they triple in size and begin to bubble around the edges, about 90 seconds. Flip the donuts and continue frying for another 90 seconds. Use a slotted spoon to remove the donuts to the wire rack to cool.
