Make the granita: In a small saucepan over medium heat, combine the Water (1 cup) and sugar and heat until the Granulated Sugar (1/2 cup) dissolves completely.

Use a vegetable peeler to remove the skin of the Blood Oranges (6) (you should have about 90 grams of peel).

Place the orange peels into the saucepan and remove the heat. Pour the mixture into a bowl set over an ice bath and let cool completely.

Juice the peeled oranges into a small bowl (you should have about 1 ¾ cups or 400 mL of juice) and set aside.

Strain the syrup into a large mixing bowl and add the orange juice.

Whisk to combine and then pour into a metal loaf pan. Place the pan in the freezer and stir and scrape with a fork every 20 minutes so that it does not freeze into a solid block.

Continue to scrape the granita so it resembles shaved ice, this should take about 3 hours total.

Labneh Cheese (1 cup) sauce: In a large mixing bowl, combine the labneh, Honey (1 Tbsp) and Kosher Salt (as needed) Vigorously whisk the mixture until it is smooth and creamy.

Assembly: Layer the granita, labneh, Oranges (6) segments, Fresh Mint Leaves (12) mint and @candied orange peel into a clear glass.
