step 1
Make the burgers: In a medium mixing bowl, combine the Ground Turkey (13 oz), Sesame Oil (1 Tbsp), Fish Sauce (1 tsp), Kosher Salt (to taste), Freshly Ground Black Pepper (to taste), Scallions (2), grated Garlic (1 Tbsp), and Fresh Ginger (1 Tbsp). Divide the mixture into 2 equal size patties and place in the refrigerator for 20 minutes.
step 2
Place a large skillet over high heat and add the Grapeseed Oil (1 Tbsp). Once the oil is shimmering, place the patties in the pan and cook until golden brown. Flip the patties and add the Butter (2 Tbsp), smashed Garlic (2 cloves), and sliced Fresh Ginger (1 in) to the pan. Use a large spoon to baste the butter over the patties until cooked to an internal temperature of 165℉.
step 3
Make the slaw: In a large bowl, whisk together the Mayonnaise (1/2 cup), Lime (1) zest and juice, Sriracha (to taste), Kosher Salt (to taste), and Freshly Ground Black Pepper (to taste).
step 4
In a mixing bowl combine slaw sauce, Red Cabbage (1/4), Napa Cabbage (1/4), and Green Apple (1) to make a well mixing cabbage slaw.
step 5
Assemble the burger: Toast the Sesame Hamburger Buns (2). Place one bottom bun on a plate and top with half of the picked Fresh Cilantro (1 bunch). Place one patty on top and then pile on the slaw and finish with the top bun to create a complete turkey burger.
