Make the fried rice: Place a wok or large skillet over medium high heat. Add 2 tablespoons Sesame Oil (2 Tbsp) to the pan and once it is smoking, add the Carrot (1), Prawns (1 lb), Garlic (2 cloves), Fresh Ginger (1 in), Red Fresno Chili Pepper (1), and ½ of the Scallion (1/2 bunch). Toss the mixture well and let cook until the prawns begin to turn pink and firm.

Add the White Rice (2 cups) and Frozen Green Peas (4 Tbsp) to the pan and toss to combine. Gently spread the mixture to the sides of the wok, leaving an empty space in the center.

Crack the Farmhouse Eggs® Large Brown Eggs (sponsored) (2) to the center of the pan with Sesame Oil (2 Tbsp) and season with Kosher Salt (to taste). Use a rubber spatula or wooden spoon to help bring the mixture together and cook the eggs fully.

Drizzle the Soy Sauce (2 Tbsp) over the rice and toss to combine.

Plate the rice and finish with the remaining Scallion (1/2 bunch). Serve with your favorite Chili Oil (to taste) or chili crisp.
