In a wide, high sided saucepan over medium heat, add the Red Wine (1 bottle) and Bucatini Pasta (8 oz) and bring to a boil. Continue cooking until the pasta is cooked through and the liquid has evaporated.

While the pasta is cooking, heat a large skillet over medium heat. Add 1 tablespoon of Olive Oil (1 Tbsp) and the Pancetta (1/2 cup) to the pan and cook until the pancetta is crispy. Add the Red Fresno Chili Peppers (2) and Garlic (4 cloves) and toss to combine.

Add the pasta and remaining wine to the pan and season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste).

Finish the dish with the remaining Olive Oil (1 Tbsp), Fresh Parsley (1 bunch), and freshly grated Parmesan Cheese (1 block).
