Make the salmon and potatoes: Preheat your oven to 350℉. Season the Salmon (1 lb) liberally with Kosher Salt (to taste) and Ground Black Pepper (to taste).

In a roasting pan, add the Olive Oil (3 Tbsp). Place the salmon, skin side down and then layer with Lemon (1) and Fresh Herbs (1/2 cup).

Place the boiled Fingerling Potatoes (1 1/2 cups) into the pan, surrounding the salmon. Season the potatoes with salt and pepper and place into the oven until the salmon is cooked through, about 20 minutes.

Make the buttermilk dressing: In a large mixing bowl, combine the Buttermilk (1/2 cup), Mayonnaise (1/2 cup), Lemon (1) zest and juice, Horseradish (2 tsp), Fresh Dill (1 tsp), Onion Powder (as needed), Garlic Powder (as needed), Fresh Chives (as needed), and Fresh Parsley (as needed). Season the mixture with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste).

Assemble: toss the potatoes in the buttermilk dressing and serve with Pickled Beets (3/4 cup) alongside the salmon.
