If you don’t have a resting rack for a sheet tray, line the tray with paper towels to absorb the oil.

Prepare the steak: Drizzle the Skirt Steak (1 lb) with Olive Oil (2 Tbsp) and season liberally with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste). Let the steak temper for 20 minutes on your counter before cooking.

In a hot skillet with oil, place the steak and the Garlic (1 clove) in the pan and cook until the steak develops a crust on all sides.

Add the Fresh Rosemary (1 bunch), Fresh Thyme (1 bunch), and Unsalted Butter (4 Tbsp) to the pan.

Once the butter melts completely, use a spoon to baste the steak with the fat in the pan. Reduce the heat to low and let the steak continue cooking until your desired doneness.

Make the peppercorn sauce: Heat a small saucepan over medium heat.

Add the Olive Oil (1 Tbsp) and Black Peppercorns (2 Tbsp) and cook until fragrant, about 1 minute.

Add the Shallot (1), Unsalted Butter (2 Tbsp), and Garlic (1 clove) and cook until the shallots begin to caramelize, about 5 minutes.

Add the Brandy (2 oz) to the pan and cook until reduced by half.

Add the Beef Stock (1/2 cup) and bring to a boil. Reduce to a simmer and add in the Heavy Cream (4 Tbsp). Season with Kosher Salt (to taste).

Make the fries: In a medium sized pot, heat your Neutral Oil (as needed) to 325℉.

Use a julienne y-peeler or mandoline to slice the Yukon Gold Potatoes (1 1/2 cups) into shoestrings.

Fry the potatoes in the oil and cook for 2 minutes. Remove the potatoes from the oil and set aside on a sheet tray with a resting rack for 5 minutes.

Increase the temperature of the oil to 350℉ and drop the fries back into the oil. Continue cooking until deep golden brown and crispy.

Remove from the oil and toss in a mixing bowl with Kosher Salt (to taste), Smoked Paprika (to taste), and grated Parmesan Cheese (to taste).

Assembly: Slice the steak and serve with the shoestring fries. Drizzle the peppercorn sauce over the steak.
