Cook the pasta: Place a large pot of water over medium high heat and bring to a boil.

Once boiling, add Kosher Salt (to taste) to the water generously and add in the Spaghetti (1 lb).

Stir the pasta to make sure it does not stick together and continue boiling until al dente, about 8-9 minutes.

Make the pasta sauce: In a large skillet over medium heat, add the Pancetta (1/2 cup) and Grapeseed Oil (1 Tbsp) and cook until the lardons begin to caramelize, about 3 minutes.

Add the Garlic (2 cloves) and Red Fresno Chili Pepper (1) and continue cooking until fragrant, about 2 minutes.

Add 2 tablespoons of Unsalted Butter (2 Tbsp) and continue cooking until the butter has melted completely.

Add in the Frozen Green Peas (1/2 cup) and continue cooking until they begin to soften, then add the Fresh Chives (1 bunch), Fresh Parsley (1 bunch), Fresh Basil (1 bunch), and Vegetable Stock (4 Tbsp).

Season the sauce lightly with Kosher Salt (to taste) and add another 2 tablespoons of Unsalted Butter (2 Tbsp). Continue cooking until the butter has melted completely.

Add ¼ cup of the pasta cooking water, Lemon (1) zest, and lemon juice to the pan and stir to combine.

Gradually add in the cooked pasta, tossing between additions to coat the pasta with the sauce completely.

Serve the pasta with a sprinkle of Crushed Red Pepper Flakes (to taste) and freshly grated Pecorino Romano Cheese (to taste).
