Make the pea puree: Place a medium saucepan of water over medium high heat and bring to a boil.

Add the Shelled Fresh Peas (1 cup) to the water and blanch until tender, but still green. This should take no more than 30-45 seconds. If you overcook the peas, the color of the puree will not be as vibrant.

Strain the peas and immediately place in an ice bath (shock) to keep the color bright green. Remove from the ice bath and pat dry.

Place the cooked peas into the bowl of a food processor with the blade attached.

Add the Lemon Juice (1) and Lemon (1), Fresh Mint Leaves (1 bunch) leaves, Coarse Kosher Salt (1 tsp) and Crushed Red Pepper Flakes (as needed) to the food processor.

Blend until most of the peas have broken down and you have a textured paste. If you like a smoother texture continue blending until all of the peas have broken down.

With the processor on low speed, drizzle in the Extra-Virgin Olive Oil (2 tsp) until just combined. Set aside.

Make the whipped ricotta: Wipe out the bowl of the food processor and add the Ricotta Cheese (1 cup) and Kosher Salt (1 tsp). Blend on high until the mixture is smooth and creamy. Remove to a bowl and set aside.

Preheat oven to 425℉ (218℃).

Toast the bread: Drizzle the Baguette (1) with Olive Oil (to taste) oil and place on a baking sheet. Bake in the oven until golden brown and crisp, about 10 minutes.

Assembly: Place a dollop of pea puree onto each piece of toast followed by the whipped ricotta, Watermelon Radishes (to taste),Pea Shoots (to taste) or tendrils, and Roasted Pepitas (to taste) Season with Coarse Sea Salt and Pepper (to taste).
