Make the syrup: Begin by steeping Dried Butterfly Pea Flower (1 2/3 cups) in hot Water (4 cups) for 5 minutes. Strain out the tea leaves. The tea should be an intense shade of blue.

While tea is still hot, stir in Honey (1 cup) until dissolved. Let cool to room temperature before refrigerating. The syrup will keep up to one month in the refrigerator in an airtight container.

When the syrup is cooled, strain the butterfly pea flowers out so the syrup is smooth and dark blue.

Make the cocktail: Combine Gin (4 fl oz) and Lemon Juice (1.5 fl oz) in a cocktail shaker half-filled with Ice (to taste). Shake until chilled, about 15 seconds.

Strain into two chilled cocktail glasses. Slowly add ¾ ounces of butterfly pea flower honey syrup into each cocktail and express a Lemon (1) over the surface of the drink and drop into glass.
