Cook the beef: Heat a large skillet over medium heat and add Grapeseed Oil (2 Tbsp).

Season the Ground Beef (1 lb) with Kosher Salt (2 Tbsp), Freshly Ground Black Pepper (to taste), and Toasted Sesame Oil (2 tsp). oil.

Add the ground beef to the pan and cook until the beef begins to brown.

Add the Crushed Red Pepper Flakes (1 tsp), Garlic (1 tsp), Fresh Ginger (1 in), Dark Soy Sauce (2 tsp), and Fish Sauce (1 tsp). Continue cooking until fragrant and caramelized, then remove from the heat and add the Scallions (4) and Toasted White Sesame Seeds (2 tsp).

Make the peanut sauce: In a small saucepan over medium heat combine the Coconut Milk (1/2 cup), Creamy Peanut Butter (1/2 cup), Fish Sauce (1 Tbsp), Dark Soy Sauce (1 Tbsp), Honey (1 tsp), and Crushed Red Pepper Flakes (as needed) and whisk together.

Bring the sauce to a simmer then remove from the heat and set aside until ready to use.

Make the daikon pickle: In a small mixing bowl, combine the grated Daikon Radish (1/2 cup), Granulated Sugar (2 tsp), and White Wine Vinegar (2 tsp).

Toss to coat completely and let sit for at least 5 minutes and up to overnight.

To serve: Scoop the beef mixture into the Little Gems Lettuce (to taste) cups and top with daikon pickle and drizzle with peanut sauce.

NOTE: You can also top with Pickled Onions (to taste) and chiles, radish, Carrots (to taste), scallions, sesame seeds, and freshly squeezed Limes (to taste) juice.
