In a medium mixing bowl, combine the Mayonnaise (2/3 cup) Black Mole Paste (1/3 cup) and Lemon (1 tsp).

In a large skillet over medium heat, cook the Bacon (2 slices) until the fat has rendered down and the bacon is crispy. Remove the bacon to a towel lined plate and place the Buns (2), cut side down into the pan to toast. Remove the buns from the pan and set aside.

Melt the Garlic & Herb Butter (2 Tbsp) in the same skillet and add the Turkey (5 oz) until the edges are golden brown and crispy. Remove the turkey and add the Green Beans (4 Tbsp) and half of the Fried Shallots (to taste) and cook until tender.

Remove everything from the pan, add in more butter and fry the Large Eggs (2) to your desired doneness. Season with Kosher Salt and Freshly Ground Black Pepper (to taste)

Spoon the mole mayo over the bottom half of the bun and top with bacon, turkey, green beans, eggs and more fried shallots.
