In a mortar and pestle, grind the Thai Chili Peppers (3) into a fine paste. Add the Garlic (5 cloves) and Red Fresno Chili Pepper (1) and pound into a rough paste.

In a small bowl, combine the Oyster Sauce (1 Tbsp) Soy Sauce (1 Tbsp) Fish Sauce (2 tsp) Dark Soy Sauce (2 tsp) warm Water (2 Tbsp) and Granulated Sugar (2 tsp) Stir to dissolve the sugar.

In a large skillet over medium high heat, add the Neutral Oil (1 Tbsp). Once oil is shimmering, add the garlic chili paste and saute until the garlic begins to caramelize.

Add the Extra Firm Tofu (12 oz) to the pan and cook until the tofu begins to brown.

Add the oyster sauce mixture and toss to coat the tofu completely. Continue cooking until the sauce begins to thicken. Add the Green Beans (1/2 cup), Shallot (1), and Sweet Bell Pepper (1/2 cup) and cook until softened.

Remove from the heat and add the Holy Basil Leaves (4 tsp) and toss until the basil just begins to wilt.

In a hot saute pan, add oil. Crack eggs into the pan and reduce the heat to medium. Season the Eggs (2) with salt and pepper.

Allow the eggs to cook until the white are firm and the yolk is runny.

Serve the tofu over freshly cooked Jasmine Rice (4 cups) and top with the fried egg.
