Warm 6-Inch Corn Tortillas (2) in a pan

In a hot pan, add Extra-Virgin Olive Oil (2 Tbsp)

Add Chorizo (2 Tbsp) and cook so the chorizo begins to render then add Shallot (1) and Serrano Chili (1) Cook until the shallots are translucent and softened.

Season with Kosher Salt (to taste) and Freshly Ground Black Pepper (to taste)

Add chopped Bacon (2 rashers) and let it render. When bacon starts to get crispy, add the Cremini Mushrooms (6)

In a mixing bowl, vigorously whisk the Eggs (4) together.

When all the ingredients are mostly cooked in the pan, add whisked eggs.

Agitate the eggs so they are evenly distributed with the vegetables and bacon.

When the eggs are still soft, add Butter (2 Tbsp) to the eggs.

Once the eggs are cooked, add Sour Cream (2 Tbsp) and remove from heat.

Assemble: Place the eggs in the bottom of the tortillas.

Next, add Pico de Gallo (4 Tbsp), Pickled Red Onions (4 Tbsp), Cotija Cheese (1/2 cup), Scallions (2), Fresh Cilantro (4 sprigs)
