Prepare seaweed butter: In a medium-sized mixing bowl, add Unsalted Butter (1/2 cup), Seaweed (2 Tbsp), Tarragon (2 Tbsp), Garlic (1 tsp), Smoked Paprika (1 tsp), Lemon (1), and Salt (as needed) Mix everything together until the ingredients are evenly distributed throughout the butter.

Make the Omelette filling: Using a nonstick skillet over high heat, add Extra-Virgin Olive Oil (2 tsp)

Add about 3 tablespoons of seaweed butter and let foam briefly.

Add the Red Onion (1), Red Fresno Chili Pepper (1), and Garlic (2 cloves) and toss to combine.

Lower the heat, add Lobster Meat (1 1/2 cups) and cook gently for a moment.

Add the Heirloom Cherry Tomatoes (5) and toss.

Taste for seasoning then transfer the mixture to a bowl along with the Fresh Chives (1/2 bunch) and mix.

Cook the omelette: Crack the Eggs (5) into a separate bowl and lightly whisk.

Add a tablespoon of seaweed butter, then pour into the skillet over medium heat. Stir vigorously with a spatula.

Once the eggs start to cook through, remove from heat and flatten the eggs in the pan with the spatula.

Gently spoon the lobster mixture in a line down the center of the eggs.

Add Mascarpone Cheese (2 Tbsp) on top of the lobster mix, then Lemons (to taste) directly over the mix.

Gently roll the omelette so the filling is in the middle of the omelette.

To remove from the pan, bring a plate to the pan and pour the omelette on the pan so the seam is on the bottom of the plate.
