In a hot pan over medium high heat, add Ghee (1 Tbsp)

Add Shallot (1) and season with half of the following ingredients: Ground Black Pepper (1 tsp), Ground Turmeric (as needed), Chili Powder (as needed), Chaat Masala (as needed), Kosher Salt (to taste)

After cooking for about 1-2 minutes, add Green Chili Pepper (1)

Once almost caramelized, add Roma Tomato (1) to the mixture and cook until everything is caramelized and no water is in the pan.

Cook the eggs: In a mixing bowl, whisk Eggs (5) together and add remaining spices: Ground Turmeric (as needed), Chili Powder (as needed), Chaat Masala (as needed)

Add the eggs to pan with cooked Pickled Onions (to taste) and mix together. Cook until the eggs are softly scrambled.

Finish the eggs with Kosher Salt (to taste) and Coconut Milk (4 Tbsp)

Assembly: Add Fresh Cilantro (1 bunch) and Scallion (1 bunch) on top of the scrambled eggs
