Make the mushroom gravy: In a large pan over medium heat, add Olive Oil (2 Tbsp). Once the oil is shimmering, add the Yellow Onion (1) and Shallot (1); cook until softened, about 3 minutes.

Add the Garlic (4 cloves) to the pan and continue cooking until fragrant, about 1 minute.

Add the sliced Mushrooms (2 3/4 cups) and the Unsalted Butter (1/3 cup) and continue cooking until the butter melts and the mushrooms become tender, about 5 minutes.

Add the All-Purpose Flour (4 Tbsp), Mushroom Powder (1 Tbsp) and Fresh Thyme Leaves (1 Tbsp). Stir continuously until the flour begins to toast and turns into a thick paste, about 2 minutes.

While whisking, slowly drizzle in the Beef Stock (2 cups) and cook until the sauce starts to bubble and thicken, about 10 minutes.

Remove from the heat and mix in Heavy Cream (3 Tbsp). Season with Kosher Salt and Freshly Ground Black Pepper (to taste). Set aside until ready to use.

Blanch the Green Beans (2 1/2 cups): Fill a medium pot with water, place over high heat and bring to a boil. Generously season the water with Kosher Salt (to taste), add the green beans and blanch until the beans are bright green and tender, about 2 minutes.

Drain the green beans and place into a bowl of ice water to stop the cooking process. Drain and set aside to dry. Once dry, cut the beans into thirds.

Make the crispy shallots: In a small pot over medium heat, bring the Vegetable Oil (1 cup) to 375℉ (190℃).

While the oil heats, combine the All-Purpose Flour (2 Tbsp), Mushroom Powder (as needed), and Ground Black Pepper (as needed) in a small bowl.

Toss the Shallots (2) in the seasoned flour and shake off excess flour before dropping them into the oil.

Fry the shallots until golden brown, about 4 minutes. Remove the shallots from the oil and place on a paper towel lined plate. Season with a pinch of Kosher Salt (1 tsp) and let cool.

Assemble: Preheat your oven to 400℉ (200℃). Cut a Puff Pastry (2 sheets) sheet into 12 equal squares and place on 2 parchment-lined sheet trays.

Brush the squares with Egg (1) wash and use a sharp paring knife to score the edges of the dough. Use a fork to poke holes in the center of the dough. Place the pastry squares in the oven and back until puffed and golden brown, about 10 minutes.

Remove the pastries from the oven and gently press the center down to form a pocket.

Gently warm the mushroom gravy and green beans, then fill the centers of each pastry with gravy and top with the green beans and crispy shallots.
