Method: Preheat oven to 275 degrees on low fan.

Make cheesecake filling: In a bowl of a stand mixer, fitted with paddle attachment, mix together Cream Cheese (3 cups), Granulated Sugar (3/4 cup), Orange (1) zest, Lemon (1) zest, and Vanilla Extract (1 tsp). Mix on medium speed for 5 minutes.

Scrape down and continue to mix for another 3 minutes to make sure there are no lumps.

On low speed, add All-Purpose Flour (2 Tbsp). Slowly add Eggs (2) and Eggs (2) yolks, scraping down after adding each egg.

Mix on medium speed for 1 minute.

Add Crème Fraîche (4 oz) and continue to mix for 1 minute. Be sure the mixture is smooth.

Make Graham Cracker Crust: In a food processor combine Graham Cracker Crumbs (2 cups), Butter (3 oz) and Granulated Sugar (4 Tbsp). The texture should be soft but holds its shape.

In the pan, pat down the graham cracker crust firmly.

Pour mixture into graham cracker crust.

Bake cheesecake for 1 hour. Check and continue to bake for 15 to 20 minutes.
