step 1
In a bowl of a stand mixer fitted with paddle attachment, mix Butter (15.5 oz) on medium speed for 30 seconds.

Add Granulated Sugar (2 cups) and continue to mix on medium speed for 3 minutes or until creamy. Scrape down.

On medium speed, slowly add Eggs (2) scraping down in between. Mix until all eggs are incorporated.

On low speed, add Molasses (1/3 cup). Mix until smooth. Scrape down.

Add the dry ingredients: All-Purpose Flour (5 cups), Baking Soda (4 tsp), Ground Ginger (1 tsp) and Ground Cinnamon (1 tsp) and mix on low until dough just comes together.

Divide dough into 800g blocks. Refrigerate until ready to sheet.

On Sheet: Between 2 sheets of parchment, sheet dough to make the desired thickness. Make sure to flour in between or they will stick.

Cut circles out with #50 round cutter.

Bake: 5 minutes then rotate for 2 minutes.
