Place the Flat Rice Noodles (1 lb) in a large, heat safe bowl and pour hot water to cover until rehydrated, about 12-15 minutes.

Heat a wok or large skillet over medium high heat and add Olive Oil (2 Tbsp) Place the chicken in the skillet and season liberally with Kosher Salt (1 pinch) and Freshly Ground Black Pepper (1 pinch) Stir to cook the Boneless Chicken Breast (1 lb) evenly, then add Garlic (2 cloves) and Broccolini (3 3/4 cups) and continue cooking until the broccolini is tender. Season with the Soy Sauce (2 Tbsp) sauce and toss to coat completely. Remove the mixture from the skillet and place the skillet back onto the heat.

Add the remaining Olive Oil (2 Tbsp) and gently scramble the Eggs (2) and season with Kosher Salt (1 pinch) Drain the rice noodles and add to the skillet along with the cooked chicken and toss to combine.
