Caramelize onions: In a hot sauté pan, add Olive Oil (to taste), add Yellow Onion (1) and begin to sauté. Season with Kosher Salt (1 Tbsp) and Granulated Sugar (1 tsp).

While onions are cooking down, add Unsalted Butter (2 Tbsp) as they continue to cook down.

Deglaze with White Wine (2 cups) and let onions cook until dark brown, soft and sweet. The onions should be done in about 15 minutes.

Toast the Baguette (1). Spread Dijon Mustard (1 Tbsp), Mayonnaise (2 Tbsp) and salt on the bread and toast it face down on the grill (or in a sauté pan).

Grill steak: Season the New York Strip Steak (12 oz) strip with Kosher Salt (1 Tbsp), Cracked Black Pepper (1 tsp) and Extra-Virgin Olive Oil (1 Tbsp).

Place on a hot grill and cook to medium rare.

When the steak is almost cooked, add slices of Blue Cheese (1/2 cup) cheese on top to gently melt the cheese.

Assembly: on the bottom piece of the baguette, add Heirloom Tomato (1), Arugula (2 3/4 cups) and caramelized onions.

Add the steak and melted blue cheese to the sandwich and place the top piece of bread on top. Slice sandwich in half.
