Make the dry rub: In a small mixing bowl, combine the Smoked Paprika (1 Tbsp), Ground Coffee (2 tsp) and Ancho Chili Powder (2 tsp).

Prep the steak: Liberally Kosher Salt (2 tsp) both sides of the Boneless Ribeye Steak (1) and set on your counter 10 minutes before you are ready to cook.

Heat a large cast iron skillet over high heat. Season the steak with half of the dry rub, using the palm of your hand to press the rub into the steak to cover completely. Add the Olive Oil (2 Tbsp) to the skillet and gently lay the steak in the center of the pan. Add Unsalted Butter (4 Tbsp) and let it melt around the steak. Add the White Onion (1) and Garlic (5 cloves) to the sides of the pan to cook in the melted butter. Cook the steak until it begins to form a crust, about 4 minutes. Flip the steak and use the rendered fat to continue cooking the onions and garlic. Add the Scallion (1 bunch) whites to the skillet and continue cooking until the steak reaches your desired doneness, then remove from the heat and let rest while you prep the bread.

Prep the bread: In a small mixing bowl, whisk together the butter, Garlic (2 cloves) and half of the remaining dry rub. Cut the Ciabatta Bread (1 piece) in half and brush the butter mixture over the cut sides. Toast the bread, cut side down, in a skillet over medium high heat until golden brown and crisp. Remove from the heat and set aside until ready to assemble.

Make the eggs: Heat a large nonstick skillet over medium heat. Add the Olive Oil (1 Tbsp) and crack the Eggs (4) into the center of the pan. Season lightly with Kosher Salt (as needed) and the remaining dry rub. Add Unsalted Butter (2 Tbsp) to the skillet and let it melt. Add the scallion greens to the pan and use a spoon to baste the eggs until the whites are set and yolk is jammy, about 3 minutes.

Assemble: Slice the steak and squeeze fresh Lime (1) juice and sprinkle Sea Salt Flakes (to taste) across the steak. Place the bottom of the toasted ciabatta on a flat surface and top with the steak, fried eggs and Fresh Cilantro (1 bunch).
