In a large stainless steel bowl, whisk together the Eggs (1 1/2 cups) and Eggs (12).

Whisk in Granulated Sugar (2 1/4 cups), Lemon Juice (2 1/4 cups), Lime Juice (1/2 cup) and zested Lemons (11 tsp).

Place over double boiler, whisk constantly until thickened, 8-10 minutes 170˚F.

Remove from heat and whisk in bloomed Gelatin Sheets (2). Whisk until smooth.

Whisk in softened Butter (12.5 oz) until completely combined.

Strain through chinois.

Cool over an ice bath to 40˚F.

Store in an airtight container or seal in pastry bags.
