Blanch the Russet Potato (1 lb) in salted boiling water until tender. Place on a wire rack to cool completely, then place in the freezer until firm, about 1 hour.

Preheat oven to 475℉. Place the potatoes on a baking sheet in a single layer and coat completely with the Neutral Oil (3 Tbsp). Roast until golden and crispy, about 20 minutes.
