Make the simple syrup: In a small pot over medium heat, combine the Granulated Sugar (2 cups) and Water (1 cup) Bring the mixture to a boil then remove from the heat and let cool completely.

Make the watermelon granita: In a blender, combine the Watermelons (4 cups), Simple Syrup (4 Tbsp), and Lime Juice (4 Tbsp). Blend until smooth then pass through a fine mesh sieve. Pour the mixture into a loaf pan and place in the freezer. Use a fork to stir the mixture every 20 minutes until it becomes the texture of a slushy.
