Roast the potatoes: Preheat the oven to 450℉. Place the Fingerling Potatoes (3 cups) in a medium saucepan and cover with water. Season liberally with Kosher Salt (to taste) and bring to a boil over medium high heat. Once boiling, reduce the heat to a simmer and cook until the potatoes are fork tender, about 10 minutes. Drain the potatoes and let cool slightly.

Line a sheet tray with aluminum foil. Place the potatoes on the tray and drizzle with Neutral Oil (to taste) tossing to coat the potatoes completely. Roast the potatoes until crispy and golden brown, about 30 minutes.

Make the pancetta breadcrumbs: Place a medium skillet over medium low heat and render the fat from the Pancetta (4 Tbsp) until crispy, about 15 minutes. Add the Panko Breadcrumbs (1/3 cup) to the skillet and toss to coat in the rendered fat. Cook, stirring occasionally until golden brown, about 5 minutes.

Finish the potatoes: While the potatoes are still hot, place in a large bowl and season with Ground Black Pepper (to taste). Mix the potatoes with the Shredded Parmesan Cheese (1/2 cup) and top with the Scallions (to taste), Fresh Parsley (to taste), and Panko Breadcrumbs
