Make Chimichurri: While garlic is roasting, in a medium bowl, combine Avocado Oil (1/2 cup), Red Wine Vinegar (2 Tbsp), Garlic (2 cloves), Fresh Parsley (1/2 cup), Fresh Cilantro (4 Tbsp), Shallot (1/2), Dried Oregano (1 tsp), Crushed Red Pepper Flakes (1 tsp), Salt (1 tsp), and Freshly Ground Black Pepper (to taste). Adjust seasoning to taste.

Prepare Spicy Aioli: In a mixing bowl, mix together Mayonnaise (1/2 cup) and Sriracha (1 Tbsp) until smooth. Adjust spiciness to taste.

Saute Baby Bella Mushrooms: Heat Olive Oil (1 Tbsp) a large skillet over high heat.

Add Baby Bella Mushrooms (6 cups) and cook, stirring constantly, until moisture evaporates and mushrooms begin to caramelize.

Add Shallot (1), Garlic (2 cloves) and Fresh Thyme (4 sprigs) and cook until aromatic.

Deglaze with White Wine (4 Tbsp), cook until reduced by half. Season with Sea Salt (to taste) and Freshly Ground Black Pepper (to taste). Remove thyme sprigs and shallot. Set aside.

Cook the Steak: Season New York Strip Steak (2 lb) generously with Sea Salt (to taste) and Freshly Ground Black Pepper (to taste). Let sit at room temperature for at least 1 hour.

Heat a heavy skillet over high heat.

Add Avocado Oil (as needed) to the pan. Place steaks in the pan and sear for 3-4 minutes per side, until deep golden brown.

Add Butter (4 Tbsp), Garlic (4 cloves), and Fresh Rosemary (1 sprig) to the pan. Baste steaks with butter for 2-3 minutes until desired doneness (140°F for medium). Remove from heat and let rest for 3-4 minutes before slicing.

Prepare Truffle Fries: Cook frozen French Fries (as needed) according to package instructions.

Season hot fries with Sea Salt (to taste), drizzle with Truffle Oil (to taste), and sprinkle with Parmesan Cheese (as needed).

Plate: Arrange sliced NY Strip steaks on plates, top with chimichurri, a side of roasted garlic bulbs, sautéed baby bellas, spicy aioli, and truffle fries.
