Make the meringue: Preheat your oven to 230℉. In a medium pot fitted with a candy thermometer. Combine the Muscovado Sugar (2/3 cup), Granulated Sugar (4 Tbsp), and Water (4 Tbsp), and cook until mixture reaches 259℉. Place the Pasteurized Egg White (1/3 cup) in the bowl of a stand mixer fitted with the whisk attachment, and whisk on medium speed until soft peaks form. With the mixer running, slowly add sugar, and continue cooking until the bowl has cooled and the mixture is shiny, about 7 minutes. Pipe the meringue onto a parchment lined sheet tray in several circles and bake until set, about 2 ½-3 hours.

Make the macerated strawberries: In a medium mixing bowl, combine the Fresh Strawberry (1 cup) and Granulated Sugar (2 Tbsp), and let sit until a syrup begins to form in the bottom of the bowl, about 30-45 minutes.

Make the whipped cream: Whisk together the Heavy Cream (1 cup), Granulated Sugar (1 Tbsp), and Vanilla Bean Paste (as needed) until medium peaks form. Gently fold in the Strawberry Jam (4 tsp).

In a bowl, layer the melted Strawberry Jam (4 tsp) , whipped cream and macerated strawberries, repeat two times. Top with torn Fresh Mint Leaves (to taste).
