Preheat your oven broiler to high.

In a large mixing bowl, mix together the Cheddar Cheese (2 cups) and Smoked Gouda (2 cups).

In a large pot over medium heat, melt the Unsalted Butter (3 Tbsp). Whisk in the All-Purpose Flour (3 Tbsp) and cook until the flour begins to toast and turn a light golden brown, about 3 minutes. Whisk in the Evaporated Milk (1 can) until smooth. Whisk in the Heavy Cream (2 cups), Dijon Mustard (1 Tbsp), Ranch Seasoning Powder Mix (1 Tbsp), Kosher Salt (1 tsp), Smoked Paprika (1 tsp), and Cayenne Pepper (as needed) and bring to a simmer.

Reduce the heat to low and gradually whisk in the Cream Cheese (1 cup) and half of the shredded cheese mixture until completely melted and smooth.

Remove from the heat and whisk in the Frank's® RedHot® Sauce (1/2 cup) and Garlic (1 head). Add the Cavatappi Pasta (1 lb) to the sauce and stir to combine.

Pour the mixture into an oven safe baking dish and top evenly with the remaining shredded cheese. Place under the broiler until the cheese begins to bubble and caramelize, about 5 minutes.
