Rub the Boneless Ribeye Steak (12 oz) with Olive Oil (as needed) and season with Steak Seasoning (2 Tbsp). Heat a non-stick frying pan over a high heat and sear for 3-4 minutes on each side, basting with Butter (3 Tbsp) towards the end of cooking. Transfer to a rack, pour over any excess butter, and set aside to rest.

Combine the Roma Tomatoes (3), Fire Roasted Red Pepper (1), Cactus Paddles (1/2 cup), White Onion (1/2), Red Jalapeño Pepper (1), Lime (1), and Fresh Cilantro (1 bunch) in a bowl and season to taste.

Wipe the steak pan clean, add a little oil and fry the Eggs (2) until the white are set and the yolks are still runny. Crumble the Goat Cheese (2 Tbsp) over the top of the eggs.

Slice the steak and layer with the pico de gallo. Top with the eggs and serve with Small Corn Tortillas (as needed) and Hot Sauce (to taste).
