For the Scrambled Egg & Chorizo Tacos: Heat a non-stick frying pan over a medium heat and fry the Mexican Chorizo (1/2 cup) until crisp, breaking up the meat with a spoon as it cooks. Drain from the pan and set aside.

Wipe the pan clean, add the Butter (1 Tbsp) and scramble the Eggs (4) until soft.

Warm the Small Corn Tortillas (3) over a gas flame or in a dry pan until softened and lightly toasted. Top with the eggs and spoon the chorizo over the top. Garnish with Fresh Cilantro (to taste) and serve with Hot Sauce (to taste).

For the Shrimp Tacos: Heat the Olive Oil (2 Tbsp) in a frying pan over a high heat, add the Large Shrimp (12) and quickly fry until they start to turn pink. Add the Lime (1/2), Garlic (2 cloves), and Jalapeño Pepper (1) and cook for a further 1-2 minutes. Transfer to a plate to rest.

Warm the Small Corn Tortillas (6) over a gas flame or in a dry pan until softened and lightly toasted, and top each with pinch of shredded Green Cabbage (1 handful). Top with shrimp then garnish with Pickled Jalapeño Pepper (1 Tbsp). Serve with Lime (1) wedges.

For the Steak Tacos: Make a steak rub with Ancho Chili Powder (2 tsp), Brown Sugar (2 tsp), Ground Cumin (1 tsp), and Ground Black Pepper (1 tsp).

Season the Boneless Ribeye Steak (9 oz) with 2 tsp of rub and drizzle with oil. Sear in a hot pan for 3-4 minutes on each side, basting with Butter (2 Tbsp) the steak cooks. Set aside to rest.

Drain the fat from the pan then add the Sweet Onion (1), Green Bell Pepper (1), a pinch of the steak rub and a knob of butter and cook for 5 minutes until soft. Increase the heat and continue cooking for 2-3 minutes until caramelised.

Warm the Small Corn Tortillas (6) over a gas flame or in a dry pan until softened and lightly toasted, then top with the onions and peppers. Thinly slice the steak, lay over the top then garnish with Pickled Red Onions (1 Tbsp).
