Prepare the Mortadella and Cheese: Heat a non-stick skillet over medium heat. Pan-fry thin slices of Mortadella (1 lb) in 2-batches (around 8-9 slices per sandwich) until the edges are browned and slightly crisp, about 2-3 minutes per side. Gather each batch into a neat stack in the pan. Top each stack with a slice of Swiss Cheese (4 slices). Cover the skillet with a lid to let the cheese melt, about 2-3 minutes. Remove the stacks and set aside.

Toast the Brioche Buns: Spread a thin layer of Mayonnaise (2 Tbsp) on the cut side of each Brioche Hamburger Buns (4). In the same skillet over medium heat, place the buns mayo-side down and toast until golden and slightly crispy, about 1-2 minutes. Remove and set aside.

Cook the Eggs: In the same skillet, fry the Large Eggs (4) over easy, or to your desired doneness. Season with a pinch of Salt (to taste) and Ground Black Pepper (to taste).

Assemble the Sandwiches: Mix the Dijon Mustard (4 Tbsp) and remaining Mayonnaise (2 Tbsp). Spread a generous layer on the bottom half of each toasted bun. Layer the stacks of mortadella and melted cheese onto the sauced bun. Top each stack with a fried egg. Place the top bun on each sandwich.
