Preheat the oven to 375ºF. Combine the Coarse Cornmeal (1 2/3 cups), All-Purpose Flour (1 1/2 cups), Granulated Sugar (1/2 cup), Brown Sugar (1/3 cup), Baking Powder (1 1/2 Tbsp), Kosher Salt (1 tsp), and Baking Soda (1/4 tsp) in a large bowl and make a well in the middle.

Whisk together Sour Cream (1 cup), Milk (1/2 cup), and Butter (9 oz). Next add whisked Large Eggs (2) to the mixture. Be sure to do it in this order to prevent the eggs from cooking.

Fold the wet ingredients into the dry ingredients.

Pour the mixture into a greased tin and bake for 25-30 minutes until risen and golden brown. Leave to cool in the tin for 10 minutes then turn out onto a wire rack and cool completely. Cut into portions.

For the whipped butter, put the Unsalted Butter (1 cup), Kosher Salt (1/2 tsp), and Honey (2 Tbsp) into a bowl and whisk for a minute until pale and fluffy. Serve on top of the cornbread.
