Cook the Spaghetti (1 lb) in a large pan of salted water for 2 minutes less than the packet instructions. Drain and set aside.

Heat the All-Purpose Flour (1/3 cup) and Unsalted Butter (1/3 cup) over a medium heat until the butter has melted. Cook for 3-4 minutes until the mixture smells nutty, then add the Ground Nutmeg (1/2 tsp) and Ground White Pepper (1/2 tsp). Gradually beat in the Whole Milk (3 cups), a little at a time, until fully incorporated.

Continue cooking the sauce for 2-3 minutes until thickened then remove from the heat and beat in the Heavy Cream (1/2 cup), Extra Sharp White Cheddar Cheese (1 cup), and Sharp Cheddar Cheese (1/2 cup). Stir gently until the sauce is completely smooth, then add the pasta and stir to combine.
