Place the Garlic (1 clove), Lime (1/2), Fresh Cilantro (1 Tbsp), Jalapeño Pepper (1), Mayonnaise (1/2 cup), and Salt (to taste) in a food processor and blend till smooth. Refrigerate.

Thinly slice the Red Onion (1) by halving through the root and slicing in the same direction. Separate the slices by hand. Place the onion slices in a heat-proof, wide-mouth jar or heat-safe container (about 1 pint capacity). The onion slices will shrink as they pickle.

Add the Kosher Salt (2 tsp), Granulated Sugar (2 tsp), Distilled White Vinegar (3/4 cup), and 1⁄4 cup water to a small saucepan. Heat over medium-high, stirring to dissolve the salt and sugar. As soon as the mixture comes to a boil, remove from the heat and pour half of the liquid over the onion, pressing down the slices with the back of a spoon. Add the remaining liquid, continuing to press down the slices.

Cover and set aside to pickle for about 30 minutes. Serve right away, or cool to room temperature and place in the fridge in the pickling liquid, covered, for up to 1 week.

Combine Ketchup (2/3 cup), Apple Cider Vinegar (1/2 cup), Brown Sugar (4 Tbsp), Smoked Paprika (2 tsp), Ground Cumin (1 tsp), Kosher Salt (1 tsp), and Freshly Ground Black Pepper (1 tsp) in a small saucepan, bring to a simmer over medium heat and cook for 5 minutes. Cool down and reserve.

Take a Hoagie Rolls (8) and cut it in half but not all the way through. Brush with melted Butter (as needed) and toast on the flat top.

Once toasted, sprinkle with approx ¼ cup of Gruyère Cheese (4 cups) on both sides of the bun and set aside.

In a non-stick skillet over medium-low heat take the Beef Brisket (3 lb) slices or chunks. Add approx ½ cup of the BBQ sauce to the meat. Slowly warm through either on the stove or in the oven.

Place the warm brisket on both sides of the cheese-coated roll. Then place the sandwich under in the oven or until the cheese has melted; about 5-8 minutes. Remove the sandwich from the oven, and top it with aioli, pickled red onions, and crispy fried onions.
