Marinate the Chicken: In a large ziplock bag, combine Olive Oil (2 Tbsp), Ground Cumin (2 tsp), Ground Coriander (1 tsp), Ground Turmeric (1 tsp), Paprika (1 tsp), Kosher Salt (1 tsp), Freshly Ground Black Pepper (1 tsp), Lemon (1/2), Red Onion (1/2), and Garlic (2 cloves) Add the Boneless, Skinless Chicken Thigh (1 lb) and massage from the outside to coat evenly. Marinate for at least 2 hours or up to 24 hours in the refrigerator.

Make the Yogurt Sauce: In a bowl, mix together Greek Yogurt (1 cup), crushed Garlic (1 clove), Ground Cumin (1 tsp), Lemon (1), Kosher Salt (to taste), and Freshly Ground Black Pepper (to taste). Cover and refrigerate until ready to assemble.

Cook the Chicken: Heat a large non-stick skillet over medium-high heat. Add olive oil and cook the marinated chicken thighs for 4-5 minutes on the first side until nicely charred. Flip and cook for another 3-4 minutes on the other side until fully cooked. Remove from the skillet, cover loosely with foil, and let rest for 5 minutes. Slice thinly once rested.
