Cornish game hen: Preheat your oven to 400℉. Place a large skillet over medium heat. Season the Cornish Game Hens (2) with Salt (to taste) and Ground Black Pepper (to taste). Pour the Neutral Oil (1 Tbsp) into the skillet and place the breasts, skin-side down, cooking until golden and crisp. Reduce the heat to medium low and add the Butter (1/2 cup), Fresh Parsley (2 sprigs), Fresh Rosemary (1 sprig), and Fresh Thyme (1 sprig). Baste the breasts as the butter melts. Place the skillet into the oven and continue cooking until the internal temperature reaches 165℉.

Sausage kale: In a large skillet over medium heat, add the Olive Oil (1 Tbsp), White Onion (1/4), and Shallots (2 Tbsp). Season with salt and cook until the onion begins to turn translucent. Add the sausage and use a spoon to break it up in the pan. Continue cooking until the Italian Sausage Link (1) begins to caramelize then add the Tuscan Kale (1 bunch) and Cherry Tomatoes (4). Cook until the kale begins to wilt and tomatoes begin to burst. Season with Kosher Salt (to taste) and Ground Black Pepper (to taste).

Beurre blanc: In a small saucepan over medium heat, add the Neutral Oil (2 tsp), Shallots (2 Tbsp), and White Onions (2 Tbsp). Cook until the onions begin to turn translucent then add the White Wine Vinegar (1/2 cup) and Lemon (1). Bring the mixture to a boil and continue cooking until reduced by half. Whisk in the Whole Grain Dijon Mustard (1 Tbsp) and then remove the pan from the heat. Slowly whisk in the Butter (3/4 cup) until it is completely incorporated. Season with Kosher Salt (to taste) and finish by adding in the minced Fresh Chives (2 Tbsp).
